Jijig-Galnash recipe
A traditional Chechen meal consisting of boiled dough and boiled meat served with garlic sauce. This recipe was invented by women to ensure that men received a daily norm of calories from a single intake of food and did not lose their workforce. Nowadays this delicious meal is widely popular through the valley, and you can find it in many of the local’s homes and guest houses.

1 kg of beef
0.5 kg of bread flour 4
1 head of garlic
4 litres of water
Beef:
Cut the beef into medium-size pieces, wash and put in a large pot. Boil well and take the meat out of the broth.
Dough:
Knead the dough using the broth and wheat flour. Roll out and cut into equal, long, and thin strips. Then cut these strips into small rectangular pieces and fold them by hand so as the maintain a lengthy shape. Put the dumplings into steaming meat broth and boil for 5-6 minutes. Enjoy with meat and garlic sauce.
Garlic sauce:
Pound garlic, add salt, and dilute with water.
